Das Große Gewächs kommt aus der Top Lage Graacher Domprobst und hier wiederum aus unserem besten Weinberg, der Kirchlay. Für das Große Gewächs werden nur reife, goldgelbe Trauben geerntet. Dabei ist die Erntemenge durch den Bernkastler-Ring limitiert und die Lage des Weinbergs intern klassifiziert. Der finale Wein darf erst nach der organoleptischen Prüfung einer Fachjury als „Großes Gewächs“ betitelt werden. Anfangs ist der Wein immer sehr verschlossen und braucht etwas Zeit zum Reifen. Nach etwas Reifezeit entfaltet sich die Komplexität und die Aromen des Weines.

Graacher Domprobst

The Graacher Domprobst is a “Große Lage”. Even before 1800 it was known that top wines can be produced from this site. The name Domprobst can be traced back to the fact that the interest income from the best vineyards was paid to the “Probst” of Trierer cathedral, who of course only choosed the best sites. The Graacher Domprobst has a slope of up to 70% with an optimal south-west orientation. The topography protects the vineyards from wind and frost and enables a very long ripening period.

The deep, slate soil dominated by clay minerals, together with the microclimatic conditions, enables the creation offinest fruit flavors and minerality. In combination with fine fruit acid, there is an incredible pleasure experience.

We use the grapes of the Domprobst to produce premium wines. In the dry wine sector, we recommend our Großes Gewächs, which must meet the strict criteria of the Bernkasteler Ring with regard to the quality of the grapes. In the noble sweet sector, the Auslese *** captivates with its distinctive fruit aroma and sweetness paired with fine acidity. The older vintages impress with their finesse and maturity, without showing any unpleasant aging marks.

Riesling

Riesling is the most important German grape variety and at the same time our hobbyhorse. Riesling reflects the terroir like no other wine - in all consistency, in all flavors. And this is exactly what makes the cultivation of Riesling as a grape variety and the production of Riesling wines so fascinating and exciting. The Riesling enables us to bring the character of a vineyard into the bottle with all its facets and this is exactly our passion.

The Riesling as a grape variety prefers climatically cooler wine-growing regions like the ones we have on the Mosel. Generally, the Riesling is a slowly ripening grape variety (in the 80s the Riesling is often not fully ripened). On the steep slopes of the Mosel you will find optimal conditions for achieving physiological ripeness, in which the intensive aroma formation takes place. The steep slopes have a very good orientation to the sun, which favors the ripening process in months of September and October. On the other hand, the slate stores the daytime heat very well and releases it back to the vines at night. The Mosel as some kind of heat store does the rest.

Our Mosel Rieslings convince with a fine citrus-fruit aroma and balanced sweet-acid play. The wines have received numerous awards and are of exceptional quality. Our spectrum of Riesling ranges from racy dry wines to the liquid gold from the steep slopes, the Trockenbeerenauslese.
